Broccoli Salad

 Do you remember when Claim Jumper had the all you can eat salad bar? well I was crazy about their broccoli salad. It was awesome. The Claim Jumper near us closed the salad bar and the broccoli salad was GONE!. This can't be. I love it. So I had to search the internet for a recipe that was close to Claim Jumpers. I did. So here it is.

The recipe is at the end of this blog. I only do the broccoli, onions, and bacon. I can do without the other stuff so I omit it. So we have broccoli, red onions, and bacon.

You can't see it but the dressing is under the broccoli, it was the first thing I made. Then I added the rest.


Add any ingredients that you like in the recipe and mix, let sit in the refrigerator for a while, mix and serve. IT IS THAT EASY. I usually ad a bit more Cider Vinegar to taste, and lots more bacon.

Salad:2 crowns fresh broccoli, cut in bite-sized pieces
1/2 c shredded cheddar cheese
1 c seedless red grapes, sliced in half
1/4 c raisins
1/3 c diced purple onion
1/3 c pine nuts
1/3 c real bacon bits (or 4 slices bacon, cooked and crumbled)

Dressing:
1/2 c mayonnaise
1/4 c sugar or Splenda
1 T cider vinegar

Mix all salad ingredients in a large bowl. Mix dressing ingredients and toss with salad.

Project Kids Luau

Me and my daughter at the luau, we were checking out the raffle prizes. Such great donated gifts for Project Kids. My daughter won the prize that she had put a ticket into so she was super happy.


Here is the dinner we had, food was ok. I liked the pulled pork, chicken was super dry though.


 The dancers were very good, they put on a great show.

Another Praying Mantis Baby


I know some of you will think he is gross but we here think is precious. I found him on my Vigna Caracalla aka Snail Vine. See that he is tan in color. I just think they are too cute, in a strange sort of way. 



I had to move him to another garden box because I wanted to spray my snail vine due to other kinds of pests. I am not sure what they are but they are little black round dots. Ants seem to like them so they must have a sweet secretion that attracts the ants.

I had to get some shots of him before I let him go.

My Son The Photographer

I was out in the yard taking pictures of some stuff, plants, another Praying Mantis and he decided he wanted to be photographer so I said yes, he actually loves to take pictures but they are usually goofy pics that you wouldn't want anyone to see LOL The picture above is my Seedling Mango that I grew from seed.

Here is my 4x8 garden box that I just moved the baby Praying Mantis too, because I had to spray my Vigna Caracalla aka snail vine due to pests. I will show you pics maybe tomorrow.
